This is one of my FAVORITE chicken casseroles! Water Chestnut, Wild Rice & Chicken Casserole is rich, creamy, and tangy. It is easy enough for a simple weeknight, but fancy enough that I think this would make a perfect main dish at a wedding or baby shower. It’s super simple, budget friendly yet somehow “elevated” in my opinion. Sour cream can be substituted for the yogurt.
TIP! If you have leftover cooked chicken that you are wondering what to do with, this casserole is perfect!

Water Chestnut, Wild Rice & Chicken Casserole
Ingredients
- 4 cup Cooked Rice
- 1 cup Cooked Wild Rice
- 2 cans Water Chestnuts
- 4 cups Shredded or Chopped Chicken (cooked)
- 1 cup Celery, Chopped and Sauteed
- 2 Onions, Chopped and Sauteed
Sauce
- 2 cups Chicken Gravy you could used canned chicken soup
- 1 cup Yogurt
- ½ cup Mayo
Instructions
- Saute the celery and onion.
- Layer the rice then chicken.
- Pour the sauce over the top.
- Top with celery and onions.
- Bake at 350℉ for 40 minutes or until heated through.
