Super Simple Granola

Normally, our go to breakfasts are eggs, oatmeal and or toast. A couple times a month we have Bacon Breakfast Souffle, or my Snickerdoodle French Toast Casserole. But sometimes there’s a super busy morning, or one we simply had family members that slept in. On those mornings it’s my Super Simple Granola to the rescue!

Super Simple Granola

This really is very easy to make. After it’s cooked feel free to add whatever you like, be it dried fruit, nuts, or even coconut.

Easy Honey Nut Granola

Ingredients

  • 12 cup oats
  • 2 tsp vanilla, maple extract, or almond extract
  • 1 cup coconut oil
  • 1 cup honey
  • 1 tbsp sunflower or regular lecithin
  • 2 teaspoons cinnamon optional
  • 1 cup seeds or nuts

Instructions

  • Combine all ingredients well. I like to use my KitchenAid.
  • Disperse on two or three parchment paper lined cookie sheets.
  • Bake at 250℉, stirring every 15 minutes. Bake until granola starts to turn golden (usually about an hour).
