Nearly Effortless Make-Ahead Meals for Busy Weeknights. Easy Make-Ahead Dinners for Busy Weeknights, by Shayla Marie
Weeknights can be downright hectic. Between work, homeschooling, after-school activities, errands, and the never-ending to-do list, dinner often ends up feeling like just one more thing to juggle. If you’ve ever looked at the clock at 5 p.m. and wondered what on earth you’re going to make, you’re not alone.
One of my favorite ways to cut down on weeknight chaos is by making easy dinners in bulk and in advance. Having a meal ready to heat and eat means no last-minute scrambling, no overspending on takeout, and more time to enjoy your evening.
Whether you work full time, part time, or spend your days homeschooling, we all share the same challenge: our days are full. By the time evening rolls around, energy and brainpower are running low. That’s where make-ahead easy dinners for busy weeknights come in to save the day.

My Weekend Bulk-Cooking Strategy
On weekends, I dedicate a little time to batch cooking. I’ll often double or triple recipes so I can stash extras in the fridge or freezer. This way, one cooking session can yield several easy dinners for the week ahead. It’s a simple, low-stress way to make sure we’re eating well even on our busiest nights.
Here are some of my go-to make-ahead meals that are perfect for busy weeknights:
Nearly Effortless Make-Ahead Meals for Busy Weeknights
1. Asian Chicken with Crispy Chili and Rice Noodles
This is my weeknight takeout swap. Tender chicken is tossed with crispy chili oil and served over rice noodles for a quick, flavorful easy dinner. I like to portion it into containers so it’s ready to grab, reheat, and eat.
This dish couldn’t be easier. I used THIS SEASONING and the method in the video above. It takes less than ten minutes to assemble this dish!
2. Creamy Chicken Soup
Comfort in a bowl. My creamy chicken soup is packed with shredded chicken, fresh vegetables, and a velvety broth. It freezes beautifully, so I make a big pot and portion it into freezer bags for effortless reheating.
3. BBQ Chicken
Always a hit! I slow-cook several pounds of chicken with barbecue sauce, shred it, and store it in meal-sized portions. It’s perfect for sandwiches, baked potatoes, or served with a quick salad — a truly easy dinner option.
4. Creamy Coconut Curry Soup
Rich and full of flavor, this soup combines creamy coconut milk with a touch of curry paste and plenty of vegetables. It reheats wonderfully, and the flavors are even better the next day, making it a perfect make-ahead easy dinner.
5. Rhubarb & Fruit Snack Pizzas
A lighter, fresh option for nights when you need something fun. Flatbreads are topped with cream cheese, fresh rhubarb, and seasonal fruits — a great side dish or light easy dinner with a bowl of soup. Find this recipe HERE.
6. Rhubarb Cream Cheese Turkey Rolls
These are great for grab-and-go meals or quick lunches. Turkey slices are rolled around a creamy rhubarb spread for a high-protein, satisfying easy dinner or snack.
