I used to make this GF, Vegan fresh strawberry pie fairly often until I had kids. As babies started entering the scene I forgot about this recipe because my kids were turning into such picky eaters. When this strawberry pie would come to mind I didn’t think they would like it so it was eventually forgotten until recently.

A couple weeks ago my husband and I decided it was time to get back to healthier eating though. We drifted from our normal foods after our major relocation from the Midwest to the Pacific Northwest with 6 kids, what can I say, we got stuck in survival mode for awhile! During our wayward junk food months (said with sarcasm) both of us gained weight and have been experiencing way more sickness as a family so we decided it was past time to get back on the healthfood bandwagon.

As I was meal planning that’s when this yummy fresh strawberry pie came to mind. I used to make it fairly often and it always gained rave reviews from family and friends! I decided to give it a whirl and see what the kids reaction was. So I got the ingredients and for a day I got the kids all hyped about the “Fresh Strawberry Pie” I was going to make.

Come pie making day I got the kids in the kitchen with me and most of them had a hand in helping with it. First we washed the strawberries. I have a produce wash that I sell and is plant based. It works so well! I don’t know about you, but I notice a difference in produce once it’s washed with a cleaner. Secondly I got started on the crust while the kids chopped the strawberries.

I find a food processor works the best for making the crust but a Vitamix or Cleanblend works too. You want the mix to look minced but not too pasty.

Tip; press the crust into a springfoam pan lined with parchment paper for best results. I found this nifty precut round parchment paper on Amazon that makes it so you don’t have to cut your own. By the way, the crust is much easier to press into the pan if your fingers are wet.

The filling is also super easy.

Put the pie in the refrigerator for at least an hour, two is better. This will stay tasty for a couple days but it’s best the same day!

So you are probably wondering “What did the kids think?” I’m pleased to say it was a hit! The pie didn’t last more than a day! My only mistake was that I should have tripled the recipe for my brood!

What I love most about this pie is that it’s not only delicious but it’s so healthy! It’s no bake so you are eating real, live food with all it’s enzymes! It’s also a no added sugar recipe. It makes a great dessert or a wonderful breakfast because it’s got natural sugars from all the fruit but it’s got healthy fats and protein as well from the nuts. This makes it the perfect breakfast food for the brain!

    1. It is amazing, Clair! So the cleaner; it’s not regular Thieves Cleaner, it’s the Produce Thieves Cleaner!
