My family’s favorite breakfast is my Bacon Breakfast Souffle. I decided I wanted to see if I could come up with a delicious sweet version, and that’s when the Snickerdoodle French Toast Breakfast Casserole was created! FYI, I do have this recipe in THIS VIDEO on my YT Channel, Mountain Mama’s Home.

This is for the sweet tooths, and it’s the perfect Sunday breakfast or brunch sweet breakfast casserole. That isn’t all though, you can make a couple of these up in advance! They even freeze well. My favorite breakfasts are tasty, but they are also made in advance because I love having my mornings for mental tasks vs physical ones.

If you like, feel free to swap out the sausage for bacon! It’s best if you can find large granulated sugar to sprinkle over the top! Don’t forget the final cinnamon sugar dusting, as this is what makes it “snickerdoodle”.

Snickerdoodle French Toast Breakfast Casserole

This is a good dish to prepare in advance and have ready to go for busy days. It's fancy enough for a holiday, but easy enough for a regular, busy homeschool day.

Ingredients

  • 6 Eggs
  • 4 cups Milk
  • ¾ cups Sugar
  • 2 tsps Cinnamon
  • ½ tsp Freshly ground nutmeg
  • 2 tsp Vanilla
  • ½ tsp Cream of tartar
  • 20 slices bread, cubed
  • 1 lb Breakfast Sausage or bacon, cooked (optional)
  • Cinnamon & Sugar for sprinkling
  • ½ cup melted butter

Instructions

  • Beat eggs, sugar, milk, vanilla, cream of tartar and spices together.
  • Grease a large casserole pan
  • Layer the bread cubes and meat in the pan.
  • Pour the egg mixture over.
  • Drizzle the butter over.
  • Refrigerate for 12 to 24 hours.
  • Remove from the fridge and allow to come to room temperature for 1 to 2 hours.
  • Cover with foil and bake 40 minutes.
  • Remove foil and bake 20 minutes or until golden.
  • When done, let it rest on the counter for 15 minutes before cutting.
  • Sprinkle with cinnamon sugar.
  • Enjoy!
