Some of the very best dinners are born out of forgetting to plan dinner.
Emergency Alfredo Sauce is one of those recipes. It wasn’t created because I had everything perfectly mapped out for the week—it came from one of those afternoons when the day ran long, I had a teething baby, hubby was working late in the fields, but the kids were hungry, and I needed something fast that would actually fill everyone up.
That’s where this sauce shines.
Because it’s made with simple ingredients and comes together quickly, it’s the kind of recipe you can throw together even when you feel behind. No thawing, no complicated steps, no standing over the stove forever. It’s rich, creamy, and satisfying in a way that makes a rushed dinner still feel like a real meal.
One of my favorite things about this sauce is how versatile it is. Obviously it’s perfect tossed with pasta and chicken, but it also makes an excellent pizza sauce. If you’ve got dough in the fridge or a quick flatbread on hand, you can spread this on, add toppings, and have a pizza dinner in the oven in minutes. It’s one of those little tricks that makes last-minute meals feel intentional instead of thrown together. It even works in soups to make them hearty and creamy!
This is also a very filling sauce. A little goes a long way, which means fewer complaints about being hungry later and more satisfied bellies at the table. On busy nights, that matters. When you’re tired and the day has already taken enough from you, dinner doesn’t need to be complicated—it just needs to work.

This chicken alfredo sauce is one I come back to again and again, especially on nights when I didn’t plan ahead… and need something fast, comforting, and dependable. It’s also the first dish I taught my older kids how to make, and make it they do all the time!

Shayla’s Emergency Alfredo Sauce
Equipment
- 1 2 quart sauce pan
- 1 stock pot
Ingredients
- 2 8 oz pkgs Cream Cheese
- 1 teaspoon Italian Seasoning
- 2 cloves minced garlic
- 2 c Milk or half n half
- 1 PKG Pasta
- 2 Chicken Breasts, Steak Bites, or a lb of sausage (optional)
- Salt and pepper to taste
- Balsamic Glaze (Optional but great!)
Instructions
- Chop and sauté the chicken or sausage, if using. Set Aside.
- Start boiling water for pasta
- Slowly heat the cream cheese & milk until soft. Whisk together.
- Make pasta and top with sauce!
