Waffles hold a special place in my heart. Growing up, they weren’t an everyday breakfast food—in fact, they were a delicacy. My first memory of eating waffles still lingers in my mind.

We had arrived early on a crisp morning at a friend’s home one Sunday morning, in time for breakfast before home church. Their home was warm and cozy, with kids running everywhere in excitement. Before being quickly shooed out of the kitchen to play I caught a glimpse of something beautiful; in the golden morning light of the tiny kitchen, the mom’s were chatting as they pulled lovely waffles from a cast iron waffle pan. My eyes widened, and that moment stuck with me.

Soon after, my mom found a waffle iron of her own, and every so often—maybe once a year—she would make waffles for us. Nothing beat them. They felt like the most special breakfast in the world. My favorite part of them was how each pocket held the perfect amount of butter and syrup.

I love using einkorn flour because it’s one of the oldest, unhybridized grains still grown today. It’s naturally higher in protein and minerals than modern wheat, with a wonderful depth of flavor. Combined with the tang of sourdough and the richness of eggs and buttermilk, these waffles turn out hearty and satisfying.

Ingredients

  • 8 eggs
  • 1 cup sugar
  • 8 cups sourdough
  • 8 cups buttermilk
  • 8 cups einkorn flour
  • tablespoons salt

Easy Homemade Syrup Ideas

While maple syrup is the classic topping, sometimes I like to switch it up with a fruit-based syrup. On this waffle day in the video, I made raspberry butter syrup:

Mash the raspberries with the sugar and butter in a saucepan, simmer briefly, and it turns into a sweet, tangy topping. Save a few berries aside to sprinkle fresh on top—the color is gorgeous.

If you’re on a budget, try making your own brown sugar syrup: simmer 2 cups water with 1–1½ cups brown sugar for 5–10 minutes, then stir in butter. For that maple flavor, add a splash of maple extract.

One of my favorite things about waffles is how versatile they are. Sure, they’re delicious with whipped cream and fruit, but did you know they can also take the place of bread?

On busy mornings, we just pull out what we need and pop them into the toaster. My kids especially love them with scrambled eggs on top, fresh fruit, or used as the base for an open-faced sandwich.
