I came up with The BEST Beef Stroganoff a few years back. We were studying Northern and Eastern Europe, and Northern Asia and Russian regions in school, and I decided to make recipes for the kids from the regions we were studying. Beef stroganoff is a Russian dish, bit has some French flavors.

It is SO wonderful on a cold winter’s day! This is definitely a “comfort food”.

Personally, I like mine with red pepper flakes, or some mince serranos. The kids like it with parmesan cheese!

Russian Beef Stroganoff

Ingredients

The Meat

  • 9 tbsp flour gluten free works great too
  • 3 tsp salt
  • 4 lbs sirloin, thinly sliced
  • 9 tbsp Butter

Sauce

  • 9 tbsp flour
  • 9 tbsp butter
  • 5 cups beef broth
  • 4 tbsp tomato paste
  • 4 cups sour cream or greek yogurt

The Vegetables

  • 2 onions, diced
  • 4 cloves garlic
  • 4 cups sliced mushrooms
  • 2 bell peppers, sliced optional
  • 2 tbsp butter
  • 9 tbsp sherry

Noodles (egg are best)

Instructions

  • Dredge beef in seasoned flour and sear on all sides. You'll need to do this in batches.

The sauce

  • Bring the broth and tomato paste to a boil.
  • Create a rue sauce with the sauce ingredients by melting the butter and flour together. Turn up the heat and add broth, whisking briskly.
  • Turn off the heat. Add the meat and allow to simmer for 30 minutes. Meanwhile prep the vegetables.

The vegetables

  • Saute all the vegetables in butter. Add them to the meat and sauce to simmer.
  • Deglaze the pan with the sherry. Add it to the rest of the ingredients to simmer.

The last 15 minutes

  • During the last 15 minutes prepare noodles or pasta. During the last 5 minutes of simmering the meat and sauce mix, add the yogurt or sour cream. Serve over noodles!
