I came up with The BEST Beef Stroganoff a few years back. We were studying Northern and Eastern Europe, and Northern Asia and Russian regions in school, and I decided to make recipes for the kids from the regions we were studying. Beef stroganoff is a Russian dish, bit has some French flavors.
It is SO wonderful on a cold winter’s day! This is definitely a “comfort food”.

Personally, I like mine with red pepper flakes, or some mince serranos. The kids like it with parmesan cheese!
Russian Beef Stroganoff
Ingredients
The Meat
- 9 tbsp flour gluten free works great too
- 3 tsp salt
- 4 lbs sirloin, thinly sliced
- 9 tbsp Butter
Sauce
- 9 tbsp flour
- 9 tbsp butter
- 5 cups beef broth
- 4 tbsp tomato paste
- 4 cups sour cream or greek yogurt
The Vegetables
- 2 onions, diced
- 4 cloves garlic
- 4 cups sliced mushrooms
- 2 bell peppers, sliced optional
- 2 tbsp butter
- 9 tbsp sherry
Noodles (egg are best)
Instructions
- Dredge beef in seasoned flour and sear on all sides. You'll need to do this in batches.
The sauce
- Bring the broth and tomato paste to a boil.
- Create a rue sauce with the sauce ingredients by melting the butter and flour together. Turn up the heat and add broth, whisking briskly.
- Turn off the heat. Add the meat and allow to simmer for 30 minutes. Meanwhile prep the vegetables.
The vegetables
- Saute all the vegetables in butter. Add them to the meat and sauce to simmer.
- Deglaze the pan with the sherry. Add it to the rest of the ingredients to simmer.
The last 15 minutes
- During the last 15 minutes prepare noodles or pasta. During the last 5 minutes of simmering the meat and sauce mix, add the yogurt or sour cream. Serve over noodles!
