Step aside, coleslaw, there’s a new cabbage salad in town! How can you beat fresh cabbage, bacon, cheese, mayo, and Italian herbs? You just can’t IMO. I first tasted a rendition of this Mediterranean Cabbage Salad Recipe at a wedding 20 something years ago. Since it is a pretty salad it’s perfect for weddings. Anyways, ever since then I was hooked and I’ve made this salad consistently.
On more than one occasion we have made this hearty, delicious, Mediterranean cabbage salad recipe as a main meal because it’s so filling. I’ve slowly incorporated a few of my own ingredient twists along the way, like I normally do with recipes! What can I say, some things in life I like to color inside the lines with, but recipes are just not one of them!
One of the nice things about this salad is the health benefits of cabbage. According to THIS ARTICLE, cabbage is packed with vitamin C, Nutrients, may help keep inflammation in check, helps improve digestion, is a heart healthy food and may even lower blood pressure and cholesterol. Did you know during the Middle Ages cabbage was nicknamed drug of the poor? I thought that bit was interesting!
The only disadvantage to this salad is that it’s not the kind you really want to make ahead of time. Although you can, and it still tastes good, the cheeses get a little soggy and the olives taste funny to me when it’s been made in advance. Also, the salt in the dressing tends to bring the water out of the cabbage. So over all it just gets slightly soggy and wet when made in advance.
If you want to make this in advance we did find a way though because my husband likes this in his work lunches, especially in the summertime. Here’s how we make it work; go ahead and cut up all the ingredients, but store cabbage separate from everything else. Toss all the other remaining ingredients together in their own container and just prior to serving toss it all together.
If you are bringing it to work make sure you keep it with an ice pack; also it helps if you keep it in a container large enough to toss it all up in.

Best Cabbage Salad Recipe, Mediterranean Cabbage Salad
Ingredients
- 1/2 head cabbage cut into bite size pieces
- 1 1/2 cup feta or cheddar cheese chunks or a combo of both
- 1/2 cup olives
- 8 sliced cooked and crumbled bacon-or more if you like
- 2 tablespoons capers
- 1/4 cup sun dried tomatoes in olive oil
Dressing;
- 1/2 cup mayo
- 1/2 cup Italian salad dressing
- 1 teaspoon dried basil or 1 tablespoon minced fresh
