Back-to-homeschool season is always a busy time in our house. I like to prep plenty of healthy snacks for kids—things like muffins, trail mix, and granola bites—so they have easy fuel between lessons.

I’ve been struggling to hit my protein goals lately. By the end of the day, I sometimes realize I’ve fallen way short, which leaves me drained and low on energy. I didn’t want another processed bar from the store—I wanted something wholesome, affordable, and homemade. That’s when an old memory came rushing back.

A Whey Protein Snack I Never Forgot

When I was a kid, my mom got me hooked early on what we dubbed back in the 80’s as “health nut food”. I kid you not when I tell you that one of my FAVORITE stores was the hippy health food coop store!

Around age 10, my mom began teaching me how to follow recipes, and one day I came across a healthy snacks cookbook. Towards the back, I found some peanut butter sesame whey protien snacks that stuck with me. They were SO good and no bake!

They were so good that I never forgot them.

So recently, as I searched for a way to boost my protein, I thought: Why not recreate those bars?

A little experimenting in the kitchen with that old recipe from memory led to these homemade whey protein bars—and they taste almost exactly like the ones I made as a kid, only even healthier. The flavor reminds us all of buckeyes, but with way less sugar and a whole lot more protein.

No Bake Protein Bars

These taste a little bit like buckeyes!

Ingredients

  • 1 cup Oat Flour
  • 1 cup Protein Powder
  • ¾ cup Peanut Butter
  • ½ cup Date Syrup or Honey
  • ½ cup Collagen Powder
  • cup Flax seed
  • 4 tablespoons Flax Oil
  • Pinch Salt
  • 2 tablespoons Cocoa Powder Optional

Instructions

  • Blend oats into flour.
  • Add remaining ingredients.
  • Form into balls.
  • Store in a jar and enjoy!
