Addictive Homemade Italian Dressing is hands down my family’s favorite Italian dressing! It’s got a slight but healthier resemblance to Olive Garden’s famous dressing, and this can be used on salads or as a marinade for chicken. One of the biggest advantages of homemade salad dressing is that YOU are in control of the ingredients. Soy and canola oil are in most salad dressings, but there are such healthier choices. Another advantage to homemade salad dressings is the cost since homemade is easier on the pocketbook!

Ingredients
- 1/2 cup vinegar (white wine is best)
- 1/3 cup water
- 1/2 cup light olive oil
- 1/3 cup honey or agave nectar
- 2 Tablespoons Chia seeds
- 1/4 cup parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 cloves garlic
- 2 teaspoons Italian seasoning
- 1/2 teaspoon xanthin gum OR 1 teaspoon Pomona’s pectin
- If zesty Italian is desired add 1 to 3 teaspoons crushed red pepper flakes
Instructions
- Add all ingredients to blender except for the xanthin gum or pectin. Turn the blender on, and add the xanthin gum or pectin through the top pour hole as the blender is going (otherwise it will create lumps).
- Be sure to salt to taste!
